Banana Cream Pie-Inspired Overnight Oat

Begin your day with a breakfast that feels like a treat—these layered overnight oats include a lovely balance of banana, cinnamon, and a hint of vanilla to boost the flavor. 

A final garnish of crumbled graham crackers adds a pie-like beauty to this simple breakfast.  

For the greatest results, use ripe bananas with brown patches on the skin and a soft sensation when squeezed. 

In a medium mixing basin, mash one banana with a fork until no large chunks remain. 

Whisk together oats, milk, ¼ cup yogurt, vanilla, chia seeds, cinnamon, and salt until well incorporated, about 30 seconds. 

Refrigerate until the oats have absorbed the liquid and the mixture has thickened, which should take at least 8 hours.  

Spoon about 1/3 cup of the oat mixture into each of four (8-ounce) jars; top with 2 tablespoons of the remaining yogurt. 

Divide the remaining banana into ½-inch-thick slices and arrange them evenly over the yogurt in the jars.
