– 1 cup freshly squeezed orange juice – 1/2 cup unsweetened applesauce – 1/3 cup vegetable oil (such as coconut oil or olive oil) – 1 teaspoon vanilla extract

Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper. 

Mix dry ingredients: In a large mixing bowl, whisk together the gluten-free all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, and orange zest until well combined. 

Combine wet ingredients: In a separate bowl, mix together the freshly squeezed orange juice, applesauce, vegetable oil, and vanilla extract until well combined. 

Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. 

Bake: Pour the batter into the prepared cake pan and spread it out evenly. Tap the pan gently on the countertop to remove any air bubbles. Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. 

Cool: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely. 

Make the glaze (optional): In a small bowl, whisk together the powdered sugar and freshly squeezed orange juice until smooth. Adjust the consistency by adding more powdered sugar or orange juice as needed. 

Glaze the cake: Once the cake has cooled, drizzle the glaze over the top. Allow the glaze to set before slicing and serving.
